Ingredients
- Tomatoes 500 grams
- Peanuts 60 grams (half a bowl)
- Sesame seeds 2 tablespoons
- Shredded coconut 120 grams (one full bowl)
- Garlic 5 cloves (finely sliced) and onion 1 (finely sliced)
- Ginger, half a piece (finely sliced)
- Sour tomato (tamarind-style tomato) 1 (finely sliced)
- Coriander powder, chili powder, masala - half a teaspoon each
- Oil 2 to 4 tablespoons
- Water 500 milliliters
Step-by-step method
1. Wash the tomatoes and cut into medium-sized pieces. Then soak them in salted water for about 20 minutes.
2. In a hot pot, stir-fry the peanuts. When the peanuts turn brown, add the sesame seeds. Add the shredded coconut and stir-fry until fragrant. Then transfer to a bowl and let it cool.
Once cooled, put it into a mortar. Add half of the onion, the garlic, and the ginger, then pound until mushy. Then add a little water and pound until it becomes a paste.
3. Next, heat the pot and add the oil. Once the oil is hot, add the remaining onion and sauté until it browns. Then add the paste you pounded earlier.
Stir-fry for about 2 to 3 minutes, then add the sour tomato, coriander powder, chili powder, and masala, and stir well until evenly mixed.
4. Then add the tomatoes and stir-fry until well combined. Add 500 milliliters of water and stir until mixed. Then cover the pot with a lid and let it simmer for about half an hour.
Once half an hour has passed, taste it to check if the saltiness is light enough.
Finally, you'll have a delicious Indian-style peanut and tomato curry ready.
