Ingredients

  • 5 cucumbers
  • About 1.5 liters of water
  • A little sea salt
  • About 3 ounces of garlic chives (Chinese chives)
  • About 3 ounces of radish
  • 5 tablespoons of chili powder and 2 teaspoons of sugar
  • 2 tablespoons of salted shrimp
  • 1 tablespoon of fish sauce
  • 1 tablespoon of thinly sliced garlic chives and 1 teaspoon of thinly sliced ginger

Step-by-step instructions

1. Wash the cucumbers with water, then cut off both ends.

2. Add salt to about 1.5 liters of water and bring it to a boil. Once it's boiling, add the cucumbers and soak them for about 1 to 2 hours.

3. Thinly slice the garlic chives and radish. Then put them into a bowl, add chili powder, shrimp, fish sauce, garlic, ginger, and sugar, and mix well together.

4. Make a cut in the salt-water-soaked cucumbers, just enough so that they can be stuffed.

5. Then gently open the cut area with your hand, and stuff the previously mixed filling firmly inside. Once all the cucumbers have been stuffed, pour a little of the kimchi liquid over them.

And there you have it - delicious stuffed cucumber kimchi with a kimchi filling!
