For those who want to try cooking something new and different, I'd like to share a recipe for baked tomatoes stuffed with beef filling.
Ingredients
- 2 large tomatoes (about 2 lbs)
- 3 tablespoons vegetable oil
- 1 lb ground beef (finely minced)
- 2 cloves garlic (finely minced)
- 15 oz tomatoes (washed and diced into small cubes)
- 1 can (6 oz) tomato paste
- A little salt and black pepper
- A little bread crumbs
- A little cheese
Step-by-step instructions
1. Cut the tomatoes in half through the middle and slice off the tops.
2. Scoop out the tomato flesh from inside using a spoon.
3. Preheat the oven to 350°F (180°C). Then place the tomatoes in a greased baking pan.
4. Chop the removed tomato flesh into small pieces.
5. Heat a pan and add oil. Once the oil is hot, add the chopped tomato flesh and stir-fry until softened. Then remove and place onto a plate.
6. Next, add the finely minced beef. Add the garlic and stir-fry evenly for about 1 minute.
7. Add the diced tomatoes, tomato paste, salt, and black pepper, stir evenly, then let it simmer for about 15 minutes until it comes to a boil. Be sure to stir frequently.
8. Then add the tomatoes fried earlier, a little cheese, and bread crumbs, and stir evenly.
9. Fill the prepared tomatoes with the beef stuffing you've made.
Then top with a little sliced cheese.
10. Then bake in the preheated oven for about 25 minutes.
And there you have it — delicious beef-stuffed baked tomatoes!
