Step-by-step instructions

1. Cut the eggplant into 2-centimeter thick slices. Then, make a cut through the middle of each slice so it can be stuffed.

2. Crack the egg into a bowl. Add the pork, salt, ginger, and spring onion, then mix well until combined. Stuff the resulting mixture into the eggplant.

3. In another large bowl, crack in the corn flour, wheat flour, and one egg. Dip the stuffed eggplant pieces into this mixture.
