Ingredients
- 4 tablespoons olive oil
- 2 slices bacon (cut into small pieces)
- 6 oz mushrooms (thinly sliced)
- 2 shallots (thinly sliced)
- 1/2 teaspoon salt
- 1.5 lb pork tenderloin
- 1/2 teaspoon black pepper
- 1 clove garlic (peeled and finely minced)
- A little cilantro
Step-by-step instructions
1. Preheat the oven to 400 degrees Fahrenheit.
Heat a pan that can go into the oven on the stove and add 2 tablespoons of oil. When the oil is hot, add the bacon pieces and stir-fry for about 3 minutes. Once the pork turns golden brown, add the mushrooms and shallots and stir-fry for another 5 minutes.
2. Next, add 1/2 teaspoon salt, 1/2 teaspoon black pepper, thinly sliced cilantro, and minced garlic, then stir-fry for another 1 minute.
3. Cut the pork tenderloin through the middle and open it up. Then cover it with plastic wrap and pound it flat with a meat mallet.
Next, place the earlier stir-fried bacon and mushroom mixture inside the flattened pork, then roll up the pork. Secure it with toothpicks so it stays in place. Once done, sprinkle a little salt and black pepper over the pork tenderloin.
4. Add 2 tablespoons of oil into the pan used earlier. When the oil is hot, add the stuffed pork tenderloin and cook each side for about 2 minutes. (This will take a total of about 6 to 8 minutes.)
Then place the pan with the pork into the oven and bake for about 18 to 20 minutes.
5. Once the set time is up, place the pork tenderloin on a cutting board and let it cool. Then slice it into fairly thick rounds.
After slicing everything, transfer it onto a serving plate.
