For foodies who are tired of the usual sweet and sour fried chicken and want to try a new flavor, this time we want to share an easy-to-make, sweet and sour pineapple chicken recipe.

Ingredients

  • Chicken breast (or chicken leg) 800 grams
  • Rice flour and wheat flour, 60 grams each, and 1½ teaspoons of corn flour
  • 1 large bell pepper (cut into large chunks) and 1 chili pepper
  • Half an onion (peeled and cut into chunks) and 5 stalks of spring onion (cut into about 5 cm lengths)
  • 1 teaspoon of thinly sliced ginger and 1 teaspoon of finely chopped garlic

  • About 1 of 4 pineapple slices (cut into large chunks)
  • 3 tablespoons each of brown sugar and tomato paste
  • 1 tablespoon of oyster sauce
  • 3 teaspoons of rice vinegar
  • 1 tablespoon of honey, 100 ml of water, and vegetable oil

Step-by-step instructions

1. To make the sweet and sour sauce, put the tomato paste, 1 tablespoon of oyster sauce, vinegar, garlic, honey, ginger, ground pepper, corn flour, and 100 ml of water into a large bowl and mix well until smooth.

2. Heat a pan and add 3 tablespoons of brown sugar. Once the sugar has melted, add the pineapple chunks and fry for about 30 seconds. Then, remove the pineapple chunks onto a plate.

3. Next, pour the sweet and sour sauce prepared earlier into the same pan and let it sit for about 1 minute. Once the minute is up, pour it back onto the plate.

4. Put the wheat flour and rice flour into a bowl and mix together. Then coat the bite-sized pieces of chicken with the flour mixture.

5. Heat a pot, add oil, and fry the chicken pieces. Once the chicken pieces turn golden brown, place them on oil-absorbent paper.

6. Heat a new pan, add 2 tablespoons of vegetable oil, and once the oil is hot, add the onion and bell pepper and stir-fry for about 1 minute.

7. Then add the sweet and sour sauce, and once the sauce thickens, add the pineapple and fried chicken and fry until well combined. Just before removing from the heat, add the spring onion into the pan.

Once done, transfer the chicken to a plate, and once it has cooled down, it is ready to be enjoyed deliciously.
