As the saying goes, "mango for fruit, pork for meat," pork dishes are indeed one of the most widely eaten foods among Myanmar people. This time, I'd like to share how to fry it so that it's crispy and delicious, with both sweet and sour flavors included.
Ingredients
- Pork 200 grams
- Sugar 1/4 teaspoon, ground pepper half teaspoon, and salt 1 teaspoon
- Chinese cooking wine 1 tablespoon
- Ginger paste, a small amount
- Oil
Ingredients needed for the batter
- Wheat flour 50 grams
- Corn flour 50 grams
- Baking powder 1/4 teaspoon
- Water 100 milliliters
Ingredients needed for the sauce
- Tomato Ketchup and lime juice 1 tablespoon
- Vegetable oil half tablespoon
- Sugar 4 tablespoons and salt 1/4 teaspoon
- Hot water 125 milliliters, thinly sliced spring onion 1 teaspoon, and thinly sliced ginger 1 teaspoon
- Corn flour half tablespoon and water 1 tablespoon
Step-by-step method
1. In a small bowl, add the spring onion, ginger, and hot water, and mix well. In another bowl, mix half a tablespoon of corn flour with 1 tablespoon of water until well combined.
2. Cut the pork into medium-sized pieces and place them in a large bowl. Then add the ground pepper, salt, cooking wine, sugar, and ginger, mix well, and let it marinate for about 10 minutes.
3. In another large bowl, add 50 grams of corn flour, wheat flour, baking soda, and 100 milliliters of water, and mix well. Add the pork pieces into this batter and mix thoroughly.
4. Heat a pot, add oil, and fry the pork pieces. Once the pork pieces turn golden brown, remove them from the pot.
5. Heat another pot and add the Ketchup. Add the sugar and half a tablespoon of oil, and bring to a boil. Once small bubbles start forming, add the ginger and spring onion water and stir.
6. Then pour in the lime juice, salt, and the corn flour water mixture into the pot. Once the sauce thickens, add the previously fried pork pieces and stir-fry until well combined.
Once the sauce has spread evenly over the pork pieces, remove it from the pot immediately.
And there you have it — a delicious sweet and sour pork dish.
