Ingredients
- 150 grams pork
- 1 slice of pineapple (out of 4 slices), cut into bite-sized chunks
- 1 red chili pepper, 1 green chili pepper (cut into small squares)
- Oil and 1 egg
- 128 grams cornstarch
- 2 slices ginger
- 1/2 teaspoon salt
- 1/2 tablespoon fish sauce
Ingredients needed for the sweet and sour sauce
- 1 tablespoon vegetable oil
- 1 teaspoon each of finely chopped ginger, garlic, and the white part of spring onion
- 1/2 tablespoon sugar, 2 tablespoons ketchup, and 4 tablespoons water
- 1/4 tablespoon rice vinegar and 1/2 tablespoon fish sauce
- 1/2 tablespoon cornstarch (mixed well with 2 tablespoons water)
Step-by-step method
1. Cut the pork into bite-sized chunks and place in a large bowl. Mix well with salt, ginger, and fish sauce, then let it marinate for about 15 minutes. Once the time is up, crack in one egg and add 32 grams of cornstarch, then knead well.
2. Place the remaining cornstarch on another plate and coat the marinated pork pieces with it.
3. The next step is to cook the sweet and sour sauce.
Heat a pot and add vegetable oil. Add the garlic, ginger, and spring onion, and sauté over low heat until fragrant. Then add the ketchup, water, fish sauce, rice vinegar, sugar, and the cornstarch-water mixture, and bring to a boil for about one minute.
Once the sauce has thickened, pour it into a bowl and set aside.
4. Heat another pot and add plenty of oil. Add the pork pieces and fry until golden brown. Once done, remove the pork pieces and set aside.
5. Next, pour out most of the excess oil from the pot, leaving just a little behind. Then add the pineapple and chili peppers, and stir-fry until softened.
6. Once the vegetables have softened, add about 4 tablespoons of the sweet and sour sauce. Stir well, then add the fried pork into the pot. Pour in the remaining sweet and sour sauce and stir-fry until well combined.
After tasting and adjusting the seasoning to your liking, your delicious Sweet and Sour Pork with Pineapple is ready to serve.
