Ingredients
- Pork - 2 lbs (4 large chunks)
- Olive oil - 1 tablespoon
- Garlic - 4 cloves (thinly sliced)
- Ginger - 1 small piece (skin scraped off, then thinly sliced into strips)
- 1 bird's eye chili (thinly sliced)
- Chicken stock - 16 tablespoons
- Brown sugar - 4 tablespoons
- Ripe mangoes - 2 (peeled and cut into cubes)
- A small amount of spring onion leaves
- Lime juice - 1 tablespoon
Step-by-step preparation method
1. Marinate the pork chunks with your preferred seasoning powders. Heat a pot and add oil. Once the oil is hot, fry the pork chunks for about 8 minutes. Fry until both sides of the pork turn golden brown. Then transfer to a plate.
2. Add the garlic, ginger, and bird's eye chili into the pot and sauté in oil for about 30 seconds. Add the chicken stock and brown sugar, and bring to a boil over high heat. Stir frequently to prevent the pot from burning.
3. When the sauce thickens (or after about 8 minutes), add the mangoes into the pot. Add the pork chunks and pour the sauce over the pork. Then cover with a lid and simmer on low heat for about 2 minutes.
Just before taking it off the stove, drizzle with lime juice and cover with spring onion leaves.
