Hello everyone! This time, I'd like to share a recipe for a dish loved by both young and old alike — egg and beef meatball stew.
Ingredients
- 12 oz beef (finely minced)
- 4 tablespoons finely chopped coriander leaves
- 1/2 teaspoon chili powder
- 1/2 teaspoon each of finely pounded garlic and ginger
- 1 tablespoon olive oil
- 1 onion (thinly sliced) and 4 cloves garlic (thinly sliced)
- 1/2 teaspoon each of chili powder and cinnamon powder
- 2 tomatoes (cut into small squares)
- 4 eggs
Step-by-step instructions
1. In a large bowl, mix together the beef, coriander leaves, 1/2 teaspoon chili powder, pounded garlic, and ginger until well combined.
Then shape the beef mixture into small meatballs.
2. Heat a pot and add the oil. Once the oil is hot, add the sliced onion and fry for about 2 minutes. Then add the garlic and fry for another 2 minutes.
3. Next, add the tomatoes and a little water, and cook until the tomatoes soften and release their juices.
4. Once the tomato juices start to boil, add the beef meatballs. Then cover with a lid and simmer for about 15 minutes.
5. Once the meatballs are cooked through and tender, make some space in the pot to crack in the eggs.
Then crack the 4 eggs into the pot with the beef. Simmer for another 3 to 5 minutes, and then it's ready to be taken off the heat.
And there you have it — a delicious dish of egg and beef meatballs!
