Ingredients
- Fermented bean curd (tofu) - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Cooking wine - 1 teaspoon
- Oil, salt and white pepper powder - a little
- Garlic - 3 cloves (thinly sliced)
- Chicken - about 1 pound (remove bones and skin, cut into 1-inch cubes)
- Potato starch flour - 12 tablespoons
- Thai basil leaves - about a handful
- Chili powder - half a teaspoon
Step by step instructions
1. Put the fermented bean curd into a large bowl and mash it with a spoon. Then add the oyster sauce, cooking wine, white pepper powder, and garlic, and mix well until evenly combined.
2. Add the chicken into the bowl and mix it in well again. Then cover and marinate for at least 2 hours, or up to overnight.
3. When you're ready to fry, heat up oil in a wok.
4. Next, coat the chicken evenly with the potato starch flour.
5. Once the oil is hot, add the chicken pieces and fry for about 3 to 4 minutes. Transfer the fried chicken pieces into a bowl.
6. In a small bowl, mix together the salt, white pepper powder, and chili powder evenly.
7. Once all the chicken has been fried, return all the chicken pieces back into the hot oil and fry for another 30 seconds. Add the basil leaves, cover the pot, and fry for about 5 more seconds. Then transfer the fried chicken and basil leaves into a bowl, and sprinkle the salt-pepper-chili mixture prepared earlier over the top.
