Hello everyone! We've already shared a wide variety of chicken curry recipes from different countries and regions. This time, we'd like to share a Taiwanese-style chicken curry recipe that's different from the previous ones.
Ingredients
- 1 lb boneless chicken (cut into small pieces)
- 5 to 6 slices of ginger
- 1 bulb of garlic (peeled)
- 2 stalks of spring onion (cut lengthwise)
- 4 dried chili peppers
- A handful of cilantro leaves
- 60 ml sesame oil
- 60 ml cooking wine
- 3 tablespoons light soy sauce and 1 tablespoon dark soy sauce
- 2 tablespoons sugar
Step-by-step instructions
1. Put the cooking wine, light soy sauce, dark soy sauce, and sugar into a bowl and mix well until combined.
2. Pour the sesame oil into a pot and heat it. Once hot, add the ginger slices and fry for about 3 minutes. Add the garlic and fry for about 1 minute. Add the spring onion and dried chili peppers and stir until fragrant.
3. Lower the heat and add the chicken, frying for about 2 minutes.
4. Then pour in the sauce mixture prepared in step (1) and bring it to a boil.
5. Once the sauce has thickened, remove from heat and just before serving, add the cilantro leaves and mix well.
