Hello everyone! For those who love seafood and shrimp dishes, this time I'd like to share a recipe for shrimp and mixed vegetable stir-fry.
Ingredients
- 1.5 lb shrimp (washed and shelled)
- 3 bowls of snow peas and bell peppers
- A little salt and ground black pepper
- 1 tablespoon vegetable oil
- A little spring onion and sesame seeds (for garnish)
- 4 tablespoons soy sauce and 8 tablespoons water
- 3 tablespoons brown sugar and 1 tablespoon honey
- 2 teaspoons thinly sliced garlic and ginger
- 1 teaspoon sesame oil
- 1 tablespoon and 1 teaspoon cornstarch
Step-by-step instructions
1. Heat a pot, then add the soy sauce, water, brown sugar, ginger, garlic, honey, and sesame oil, stirring continuously until the sugar has dissolved.
Then bring it to a rolling boil over high heat.
2. Mix 2 tablespoons of cold water with 2 tablespoons of cornstarch until smooth. Pour the resulting cornstarch slurry into the pot and simmer for about 2 minutes. Once the sauce has thickened, pour it into a bowl and set aside.
3. Heat another pan and add 1 teaspoon of vegetable oil. Once the oil is hot, add the snow peas, bell peppers, salt, and ground black pepper, and stir-fry for about 3 to 5 minutes.
4. Once the vegetables have softened, add 2 tablespoons of water and wait until the water has evaporated. Once the water has dried up, remove it from the pan.
5. Add 2 teaspoons of oil back into the pan. Once the oil is hot, add the shrimp along with salt and ground black pepper, and stir-fry for about 2 to 3 minutes.
6. Then, add the stir-fried vegetables back into the pan. Pour in the sauce and stir-fry over medium heat for about 2 minutes.
Once all these steps are complete, remove from heat and transfer to a serving plate. Sprinkle sesame seeds and spring onions on top to garnish the dish. And there you have it — a delicious shrimp and mixed vegetable stir-fry.
