Ingredients
- 1 piece chicken breast
- 4 cloves garlic
- About half an inch of ginger
- 2 stalks lemongrass
- About a quarter of one red chili
- A handful of coriander leaves
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- Half a lime

- 16 sheets wheat/flour wrappers
- White sesame seeds
- A little salt
- 1 tablespoon oil
Step-by-step instructions
Cut the chicken into small square pieces.
Slice the ginger and garlic thinly as well.
Slice the lemongrass into thin rounds, then chop it as finely as possible.
Cut the red chili into small pieces as well.
Slice the coriander leaves thinly too.
Next, put the ginger, garlic, lemongrass, chili, and coriander into a large bowl. (Only add 1 tablespoon of coriander.)
Into that bowl, add half a tablespoon of chili powder, 2 teaspoons of soy sauce, 1 teaspoon of fish sauce, half a tablespoon of flour, squeeze in the lime, and mix everything well until combined.
Next, add the small chicken pieces and mix thoroughly so the marinade soaks well into the meat.
Add about half a tablespoon of salt and knead it in. Then place it in the refrigerator for about 30 minutes.
Once the time is up, take it out of the refrigerator. Then heat a pan and add 1 tablespoon of oil. Once the oil is hot, add the chicken and fry over high heat.
After frying for about 5 to 7 minutes, transfer it to a plate and squeeze in more lime. Add the remaining coriander leaves and mix well.
Brush oil onto the wrappers. (You need to brush both sides.)
Then fold in about one inch from each of the two edges.
Scoop about 2 tablespoons of the fried chicken and place it on the wrapper.
Then roll it up tightly.
Once you've rolled all of them, place them on a baking tray.
Brush oil on each one again and sprinkle sesame seeds on top. Then bake in the oven at 400°F for about 15 to 20 minutes.
Once the time is up, you'll have delicious, golden-brown chicken spring rolls ready to enjoy.
