Ingredients
- 2 red chilies and 2 green chilies (cut into small squares)
- 1 shallot (cut into small squares)
- 4 cloves of garlic (finely sliced)
- A handful of Thai holy basil leaves
- Half a lime (squeezed for juice)
- 50 grams of pork (finely sliced)
- 3 tablespoons of oil
- 1 tablespoon of fish sauce
- 1 teaspoon of soy sauce
- 1 teaspoon of sugar
Step-by-step instructions
1. Heat a pan and add oil. Once the oil is hot, add the pork and stir-fry for about 2 to 3 minutes. Once done, remove it onto a plate.
2. Add the garlic and fry in oil until fragrant. Add the red chilies, green chilies, and shallot, and stir for about 1 to 2 minutes.
3. Return the pork fried earlier to the pan, then add the holy basil leaves and stir-fry together.
4. Add the fish sauce, soy sauce, and sugar, stir-fry for about a minute, then taste and adjust the saltiness lightly.
5. Just before taking it off the stove, pour in the lime juice and stir again until well combined.
And there you have it - a delicious Thai-style sweet, sour, and spicy stir-fried minced pork!
