Hello everyone! This time, I want to share how to cook potato chicken curry mixed with coconut milk.

Ingredients needed to make the curry paste

  • 1 small piece of ginger, 1 bulb of shallot, and 5 cloves of garlic (thinly sliced)
  • 1 teaspoon of turmeric powder and a little chili powder
  • 2 chilies (thinly sliced)
  • 3 tablespoons of lime juice
  • 3 tablespoons of fish sauce

  • 2 tablespoons of Ketchup
  • 1 tablespoon of brown sugar
  • 1 teaspoon of shrimp paste

Main ingredients

  • 1 can of coconut milk
  • 2 tablespoons of cooking oil and 8 tablespoons of chicken stock
  • About 2 lime leaves
  • 2 lbs of chicken (chicken breast or chicken thigh/leg meat)
  • 2 tomatoes and 2 potatoes (cut into small pieces)

Step-by-step instructions

1. Put all the ingredients needed for the curry paste into a blender and blend until smooth.

2. Add about 4 tablespoons of coconut milk and blend again.

3. Heat a pot and add 2 tablespoons of cooking oil. Once the oil is hot, add the curry paste made earlier and stir for about 1 minute.

4. Once the curry paste becomes fragrant, add the chicken and stir until well mixed.

5. Then add the chicken stock and the remaining coconut milk, and stir until well mixed.

6. Add the lime leaves for the potatoes and to add fragrance, then cover with a lid and let it simmer for about 15 minutes until it boils.

7. When the time is up, add the tomatoes and let it simmer for another 15 minutes. You should also stir it occasionally.

Taste it to check the saltiness - if it's too salty or too sweet, you can add a little more lime juice. Or if you want it a bit spicier, add a little more chili.

8. Once the 15 minutes is up and both the potatoes and chicken are tender, you can remove it from the stove.

And there you have it - a delicious chicken curry with coconut milk!
