Ingredients

  • About 1/3 of a pineapple (cut into small cubes)
  • 3 bowls of cooked rice
  • A handful of shrimp (peeled)
  • A small amount of shallots and 4 cloves of garlic (thinly sliced)
  • 2 chili peppers (thinly sliced)
  • About 125 ml of chicken stock and 1 egg
  • A small amount of green peas and cashew nuts
  • 3 tablespoons of fish sauce, 1 tablespoon of soy sauce
  • 1/2 teaspoon of sugar
  • 4 tablespoons of oil

Step-by-step instructions

1. Heat the wok and add the oil. Once the oil is hot, add the shallots, garlic, and chili peppers, and stir-fry until fragrant.

2. Crack in the egg and fry it.

3. In a bowl, mix together the chicken stock, fish sauce, and sugar until well combined. Then add it into the wok and stir-fry until well mixed.

4. Add the cashew nuts and stir-fry for about 30 seconds.

5. Add the rice and stir-fry for a few minutes. Then add the shrimp and continue frying.

6. Next, add the green peas and pineapple and stir-fry until well combined. If you'd like, you can also add raisins at this point.

7. Taste and adjust the seasoning to your liking, then remove from the heat.

You can serve the pineapple shrimp fried rice directly on a plate, or for those who want a more decorative presentation, you can serve it inside a hollowed-out pineapple for a beautiful look.
