Thai food is famous for its sour and spicy flavors. Thai-style green papaya salad (som tum), mango salad, and tom yum soup are all well-known and popular dishes.

Since young, fresh mangoes are just coming into season now, I'd like to share an easy way to make a sour and spicy mango salad.

Ingredients

  • 2 unripe green mangoes
  • 2 bowls of bean sprouts (200 grams)
  • 50 grams of coriander (Chinese parsley)
  • 3 to 4 stalks of spring onion
  • A handful of peanuts and a few mint leaves

Dressing needed for the salad

  • 3 tablespoons of fish sauce
  • 1 lime
  • 2 tablespoons of brown sugar
  • 1 to 2 teaspoons of chili paste

Step-by-step instructions

First, make the sour-spicy dressing.

In a bowl, mix the fish sauce, brown sugar, and chili paste together well, then squeeze in the lime juice. (If you don't want to use chili paste, you can use chili powder instead)

Peel the mangoes and use a grater to shred them into thin strips.

Put the shredded mango strips into a plate, then add the bean sprouts, thinly sliced coriander, and spring onion. (For extra flavor, you can also add fried tofu slices, fried chicken, or shrimp)

Next, pour the dressing made earlier over the mango. Taste it to check the saltiness, and if it's too salty or too sweet, squeeze in a bit more lime juice.

Finally, transfer to individual plates, sprinkle with mint leaves and crushed peanuts, and enjoy this delicious dish.
