The most important element in making meatball curry is the curry sauce. Let's take a look at how to mix it in the right proportions.
Ingredients
Ingredients needed to make the meatballs
- About 2 lbs of pork (or chicken or beef), finely minced
- 1 tablespoon fish sauce
- 3 stalks spring onion (thinly sliced)
- 2 teaspoons finely minced ginger and about 2 tablespoons coriander leaves
- 2 cloves garlic (thinly sliced)
- 1 teaspoon chili powder and a little bit of ground pepper
- 2 tablespoons coconut milk
Ingredients needed for the curry sauce
- 125 ml coconut milk
- 3 tablespoons tomato paste
- 1 teaspoon fish sauce and 1 teaspoon chili powder
- 1/8 teaspoon ground pepper
Step-by-step instructions
1. In a large bowl, combine all the ingredients needed for the meatballs — the meat, fish sauce, spring onion, coriander leaves, garlic, chili powder, coconut milk, and ground pepper — and knead well until thoroughly mixed.
Once well kneaded, shape into balls. (If you prefer a long sausage shape instead, feel free to shape it however you like.)
2. In another bowl, mix together all the ingredients needed for the curry sauce.
3. Heat a pot, add a little oil, and once the oil is hot, add the meatballs and fry. After about 2-3 minutes, you'll see the meatballs turn golden brown. At that point, pour in the curry sauce.
4. Then, lower the heat and cook uncovered for about 15 minutes. Remove from heat once the sauce has thickened.
Just before serving with rice, add the coriander leaves and spring onion. Now you can enjoy this fragrant and delicious meatball curry.
