Hello everyone! This time, the dish we're sharing is a recipe for Thai-style seafood fried noodles. Although it's called seafood, we'll mainly be using shrimp and eel.
Ingredients
- 1 packet of flat rice noodles
- About 15 shrimp
- About 12 eels
- 4 chili peppers
- Half a red bell pepper
- 3 cloves garlic
- 1 small onion
- 1 tablespoon sugar
- 2 teaspoons light soy sauce
- 2 teaspoons fish sauce
- 4 tablespoons vinegar
- 2 tablespoons chopped coriander
- 1 tablespoon dark soy sauce
- 1 small bowl of chicken stock
- 3 eggs (beaten)
- Half a lime
Step-by-Step Instructions
Peel the shrimp and wash them clean. Also wash the eel thoroughly with running water, then cut each one into three pieces. Pour the vinegar into a large bowl and add the sliced chili peppers.
Next, heat up a pot, add oil, and fry the shrimp for about 2 to 3 minutes. Set the fried shrimp aside separately.
Add another tablespoon of oil and fry the eel for about 2 to 3 minutes. Add 1 tablespoon of dark soy sauce and stir again. Then set it aside separately.
Add the finely chopped garlic, onion, chili peppers, and vertically sliced bell peppers into the pot and stir-fry for about 30 minutes.
At the same time, add the noodles along with half of the chicken stock and fry until the noodles become soft. Once the noodles have softened, add the remaining half of the chicken stock and stir well. Add the light soy sauce, sugar, and fish sauce, then stir again.
Next, pour the beaten eggs into the pot and continue frying until the eggs are evenly distributed throughout. Add the fried shrimp and eel back in and stir-fry once more.
And there you have it — Thai-style seafood fried noodles, or shrimp and eel fried noodles! You can enjoy the hot, freshly made fried noodles together with the chili-vinegar sauce prepared in the first step.
