- 225 grams chicken breast (remove bones and skin; chicken thigh can also be used)
- 225 grams mushrooms (thinly sliced)
- 1 bird's eye chili (thinly sliced)
- 2 packs dried noodles
- 1 lime (juiced)
Ingredients needed to make the soup
- 1 tablespoon peanut oil (vegetable oil can also be used)
- 1/2 onion (thinly sliced)
- 3 cloves garlic (thinly sliced)
- 2 teaspoons finely chopped ginger
- 4 tablespoons chili paste
- 1 liter chicken stock
- 400 ml coconut milk
- 5 tablespoons peanut butter
- 3 tablespoons fish sauce
- 1 tablespoon sugar
Step-by-step instructions
1. Heat a pot and add a little oil. Once the oil is hot, add the onion and sauté for about 1 minute.
2. Add the garlic, ginger, and chili paste, and sauté for another minute.
3. Next, add the chicken stock. Add the coconut milk, peanut butter, fish sauce, and sugar, and stir well until combined. Once the peanut butter has fully dissolved and blended into the stock, taste it. (You can add more chili paste depending on how spicy you'd like it. If it's too spicy, you can add a little more sugar.)
4. Once the stock starts boiling, add the chicken breast and mushrooms, cover with a lid, and let it boil for about 15 minutes.
5. After 15 minutes, remove the chicken pieces and shred them using forks.
6. Next, add the noodles and bird's eye chili into the stock and let it sit for about 2 to 3 minutes. Once done, turn off the heat. Then add the shredded chicken from earlier and the lime juice, and stir well until combined.
