Grind 3 long chilies and 3 round chilies in a grinder.
Slice 6 cloves of garlic and 3 shallots and put them into the grinder. Add 1.5 teaspoons of coriander root powder and 1 stalk of lemongrass, sliced. Add 1 tablespoon of shrimp paste and a little chili powder, then add the previously ground chilies and grind everything together again.
Put a full bowl's worth of pork belly with skin into the pot and fry for a while. No need to add oil.
To make it even tastier, once the pork belly with crispy skin is nearly ready, add some pork ribs and streaky pork meat to fry as well.
Add all the ingredients that were ground first and stir well.
