To start, peel half of an avocado and slice it into thin strips.
Also slice half of an apple into thin strips.
In a deep mortar, add 3 cloves of garlic and 3 chili peppers and pound them. Once pounded fine, add 1 tablespoon of palm sugar after kneading it loose, and pound again.
Add 1½ tablespoons of dried shrimp and pound. If you have roasted peanuts (sihote seeds), add a little and pound. If you don't have roasted peanuts, add regular peanuts instead.
Once well pounded, add 2½ tablespoons of lime juice and 1½ tablespoons of fish sauce into the mortar and mix well. Cut half of a large tomato and add it in to pound together. Once everything is done, transfer it into a large bowl.
Add the sliced avocado and apple as well, and mix with a spoon. Grate 1 small carrot and add it in, then mix again.
Slice an apple into thin pieces and arrange them in a row on a flat plate. Then place the mixed salad in the center.
And there you have it — a delicious Thai-style apple and avocado salad!
