Ingredients
- Pork (or chicken or beef) (choose whichever you prefer)
- 1 teaspoon salt
- Vegetable oil (about 500 ml)
- 1 shallot (thinly sliced) and 1 stalk of spring onion (finely sliced)
- 3 chili peppers (thinly sliced)
- 4 pieces of tofu
- 3 tablespoons fish sauce and 2 tablespoons lime juice
- 1 tablespoon sugar
- 125 ml water (or chicken stock)
Step-by-step method
1. Cut the tofu into triangular pieces, then rub them with salt. Thinly slice the shallot. Finely slice the meat and spring onion.
2. Heat the pot, add oil, and fry the tofu pieces for about 5 minutes. Then place them on paper towels to drain the oil.
3. Leave a little oil in the pot and scoop out the excess oil. Then add the shallot, spring onion, and chili peppers, and sauté in the oil. Once done, add the meat and stir-fry.
4. Once the meat is cooked, add a little water and bring it to a boil. If it becomes too dry, add a little salt and taste for seasoning, adjusting the saltiness lightly.
5. As the final step, add the fried tofu pieces into the pot and stir-fry until well combined.
And there you have it — a delicious meat and tofu stir-fry.
