Ingredients

  • 5 tablespoons vegetable oil
  • 2 eggs (beaten)
  • 3 tablespoons corn flour and 12 tablespoons wheat flour
  • Half a teaspoon each of salt, ground black pepper and garlic powder, and 2 teaspoons chili powder
  • 2 pieces chicken breast (cut into bite-sized pieces)

Ingredients needed to make the sauce

  • 1 tablespoon vegetable oil
  • 1 onion (peeled and cut into bite-sized pieces)
  • 1 red and 1 green bell pepper (cut into 1-inch square pieces)
  • 2 cloves garlic (peeled and crushed)
  • 1 tablespoon finely sliced ginger
  • 10 tablespoons tomato ketchup
  • 2 tablespoons vinegar
  • 6 tablespoons brown sugar
  • 17 oz pineapple (cut into small square pieces)

Step-by-step preparation method

1. Heat a pan and add oil.

2. In one bowl, beat the eggs. In another bowl, put the corn flour. In another bowl, add wheat flour, salt, ground black pepper, garlic powder and chili powder, and mix well.

3. Coat the chicken pieces with the corn flour. Then dip them into the egg. Then coat them with the wheat flour mixture.

Put the coated chicken pieces into hot oil and fry for about 6 to 7 minutes. Once the chicken turns golden brown, take it out onto a plate.

Coat and fry the remaining chicken pieces in the same way as above.

4. Next, you need to make the sauce.

Heat a pan, add the onion, and sauté for about 3 minutes. Then add the bell peppers and stir-fry for about 1 minute. Add the garlic and ginger and fry for about 1 minute. Then add the tomato ketchup, vinegar, brown sugar and pineapple, and let it simmer until it comes to a boil.

5. Once the sauce has thickened, add the fried chicken pieces into the sauce and stir-fry until well mixed.
