Ingredients
- 8 chicken eggs (duck eggs can also be used)
- 1 shallot (thinly sliced)
- 1 stalk spring onion (thinly sliced)
- A little salt and a little vinegar
- 8 tablespoons of water
- 2 tablespoons chili paste and 3 tablespoons chili powder
- 4 tablespoons fish sauce
- 2 tablespoons sugar
- 3 tablespoons honey
- A little ground pepper
Step-by-step instructions
1. Pour water into a pot. Add a little salt and a little vinegar, and bring to a boil. Once it's boiling well, add the chicken eggs (or duck eggs), cover with a lid, and let it simmer for about 7 minutes. After 7 minutes, place the boiled eggs into cold water to cool them down. Once cooled, you can easily peel off the shells.
2. Clean the pot again and add 16 tablespoons of water. Add the chili paste, chili powder, soybean fish sauce, sugar, honey, and ground pepper, and mix well until combined.
3. When it starts to boil, add the thinly sliced shallots. Reduce the heat and let it simmer for about 5 minutes.
4. Once the sauce has reduced by about half, add the boiled eggs and simmer for about 2 minutes.
After 2 minutes, you can remove it from the stove. Transfer it to a plate, garnish with spring onions, and enjoy it deliciously together with rice.
