Hello everyone! This time, I'd like to share a recipe for roasted potatoes with a fragrant hint of garlic.

Ingredients

  • 500 grams (about 1 pound) small potatoes
  • 1.5 tablespoons olive oil
  • 1 tablespoon each of thinly sliced coriander and dill
  • 1 teaspoon thinly sliced garlic
  • A pinch of salt and ground pepper

For the sauce to brush on

  • 1 teaspoon each of thinly sliced dill and coriander
  • 3 tablespoons olive oil
  • 1.5 teaspoons lemon juice
  • A pinch of salt and ground pepper

Step-by-step instructions

1. Preheat the oven to 350 degrees. Without slicing the potatoes into rounds, just score them lightly with a knife and open them up a little.

2. Place the scored potatoes into a large bowl and coat them with olive oil, dill, coriander, garlic, salt, and pepper.

3. Place the potatoes on a baking tray and put them in the oven for about 20 to 25 minutes. Meanwhile, in a small bowl, mix together olive oil, lemon juice, dill, coriander, salt, and pepper until well combined.

4. Once the potatoes have finished their first roasting time, take them out of the oven and brush them with the sauce prepared earlier. Then put them back in the oven for another 25 minutes or so.

Once the time is up, you'll have delicious roasted potatoes ready to enjoy.
