Ingredients
- 1/2 onion (cut into small cube-shaped pieces)
- 1 carrot (cut into pieces the same size as the onion)
- Green bell pepper (cut into pieces the same size as the onion)
- A small amount of green peas
- A small amount of mushrooms (thinly sliced)
- A handful of bean sprouts
- 3 full bowls of rice (serves 3)
- 2 eggs
- 1 teaspoon of light soy sauce and 2 teaspoons of dark soy sauce
- 2 tablespoons of oil, a small amount of salt and ground pepper
Step-by-step instructions
1. Break up the rice grains so they don't stick together.
2. Beat the 2 eggs. Heat the wok, add oil, and scramble the eggs. Then set them aside separately on a plate.
3. Heat the wok over high heat and add 1 tablespoon of oil. Once the oil is hot, add the onion and carrot, and stir-fry for about 30 seconds. Then add the mushrooms, bell pepper, and green peas, and stir-fry for another 30 seconds or so.
4. Once all the vegetables are cooked through, add the rice and stir-fry together. Then add the bean sprouts and continue stir-frying.
5. After that, add the light soy sauce, dark soy sauce, salt, and ground pepper, and stir-fry for another minute or so. Taste for seasoning, then add the scrambled eggs together with the rice, mixing everything well one final time.
And there you have it — delicious mixed vegetable fried rice. For larger families, you can increase the quantities of the ingredients slightly to cook more.
