For those who love potato croquettes, this time I'd like to share a recipe for frying potato croquettes mixed in with carrots and spring onions.

Dear Foodie readers, it's also fine to make vegetable potato croquettes by adding in any other vegetables you like.

Ingredients

  • 2 large potatoes
  • 1 carrot (peeled)
  • 3 stalks of spring onion
  • 1 teaspoon vegetable oil
  • 3 tablespoons corn flour

  • A little salt
  • 1/2 teaspoon chili powder

Step-by-step instructions

1. Peel the potatoes and wash them. Then slice them into thin rounds.

Add water into a pot along with a little salt. Then add the potatoes and boil until soft.

2. Also add the peeled carrot into the boiling water to cook.

3. Cut the spring onions into pieces about half an inch long.

4. Once the carrot has softened, remove it from the hot water and cut it into small cubes.

5. Then put the boiled potatoes into a large bowl and mash them into a smooth paste using a fork.

6. Into that bowl, add the carrot, spring onions, 3 tablespoons of corn flour, a little salt, and 1/2 teaspoon of chili powder, then mix well until evenly combined.

7. Put the mixed potato mixture into a plastic bag. Then seal the plastic bag tightly and snip off a corner of the bag with scissors.

8. Heat a pot and add oil. Once the oil is hot, as shown in the picture, squeeze the potato mixture from the plastic bag into the hot oil. Then fry the potato croquettes until they turn golden brown.

Transfer the finished potato croquettes onto a plate. Once all are fried, you'll have delicious carrot and spring onion potato croquettes. You can enjoy them deliciously with your favorite sauce.
