Step-by-step instructions

1. Soak the mushrooms in water and slice them thinly. Peel the potatoes and cut into medium-sized chunks. Peel the ginger and slice it thinly. Cut the chicken into medium-sized pieces as well.

2. Heat a pot and add oil. Once the oil is hot, add the ginger and stir-fry until fragrant. Then add the fermented bean paste and stir well to combine.

3. Add the mushrooms and potatoes, then stir for about one more minute. After that, add the sugar, water, light soy sauce, and dark soy sauce, and stir until well mixed.

4. Let it cook until the liquid comes to a boil, then check if the potatoes have softened. Once the liquid is boiling, cover with a lid and let it cook for about 5 more minutes.

Once the liquid has thickened, you can remove it from the heat.
