Ingredients
- 10 quail eggs (you can also use chicken eggs or duck eggs)
- 1 kilogram pork belly
- 6 tablespoons fish sauce
- 5 teaspoons sugar
- 1 liter coconut juice
- 12 tablespoons water
Step-by-step method
1. Put the quail eggs into water and boil for about 12 minutes.
Once done, let them cool and peel off the shells.
2. Cut the pork belly into pieces about 2 inches square.
3. Heat a pot and add the sugar. Then add 1 tablespoon of water and stir.
Keep adding water one tablespoon at a time until all the water is gone, stirring continuously. In the end, you'll get a nice brown caramel syrup.
4. Next, add the fish sauce and stir well to blend. Then add the boiled quail eggs and stir until they turn a golden brown color.
Once done, transfer them into a bowl.
5. In that same pot, add the pork pieces and stir until they turn brown.
6. Then add the coconut juice. Leave the pot lid slightly open and let it come to a boil for about 20 minutes.
7. Once done, put the quail eggs back into the pot and simmer for about 10 minutes, or until the pork is tender.
Once the pork becomes tender, you'll have a delicious quail egg and pork belly stew ready to enjoy.
