Ingredients
- Dried shrimp - 4 tablespoons
- Corn - 2 ears
- Spring onions - 4 stalks
- Olive oil
- Fish sauce - 1 teaspoon
- Butter - 1 tablespoon
- Salt - 1/4 teaspoon
Step-by-step method
1. Put the dried shrimp into a bowl. Add water until the shrimp are fully submerged and soak for about 20 minutes.
2. While the dried shrimp is soaking, remove the kernels from the corn. Slice the spring onions thinly, separating the white parts from the green parts.
3. Once the dried shrimp has finished soaking, pound it in a mortar and pestle.
4. Heat a pan and add olive oil. When the oil is hot, add the pounded dried shrimp and stir. Once the shrimp is heated through, add 1 tablespoon of fish sauce and stir until well combined. Then transfer it into a bowl.
5. In the same pan, add 1 tablespoon of butter. Once the butter has melted, add the white parts of the spring onions and sauté until fragrant. Then add the corn and half a teaspoon of salt, and stir-fry for about 2 minutes.
6. Once the corn is cooked, add the dried shrimp and the green parts of the spring onions, and stir-fry until well mixed.
After tasting to check that the seasoning is mild and just right, you can remove it from the heat.
