I'd like to share a little recipe for Thai-style chicken curry that's different from the usual way of cooking chicken curry, with a saucy texture that will delight your taste buds.

- Chicken 1 kg
- Coriander (Chinese parsley) 1 bunch
- Fresh green chilies 10 pieces
- Kaffir lime leaves 7 leaves
- Spring onions (shallots) 5 stalks
- Lime 1 fruit
- Garlic 100 grams
- Ginger 50 grams
- Sugar 2 tablespoons
- Oyster sauce 5 tablespoons
- Chili powder and cumin powder 1 tablespoon
- Green beans 15 pieces
- Carrots 3 pieces
- Fresh broccoli 50 grams
- Coconut milk 400 milliliters
Step-by-step instructions
(1) First, you need to prepare the green curry paste, which is the main component of this Thai-style spicy chicken curry. From the ingredients mentioned above, put the coriander, fresh green chilies, kaffir lime leaves, spring onions, garlic, ginger, chili powder, cumin powder, lime (squeeze in the juice), sugar, and oyster sauce into a blender and grind them together.
(2) Next, cut the cleaned chicken into medium-sized pieces and heat them in a pan with a little olive oil. Once the outer layer of the chicken has firmed up, mix in the green curry paste you ground earlier and stir-fry in oil for about 5 minutes. After frying in oil, add the coconut milk and cook for about 20 minutes.
(3) While the chicken is cooking, blanch the green beans and fresh broccoli in hot water for about 5 minutes. Then add the blanched green beans, broccoli, and thinly sliced carrots into the chicken curry and cook over low heat for about 7 minutes. Once the time is up, you'll have a delicious Thai-style spicy chicken curry dish with a lovely hint of coconut milk aroma.
