Drain the soaked papaya well. Put a thick layer of tissue in a bowl and place the papaya on it to absorb any remaining water.
In the mortar, put the garlic and green chilies and pound them. Once finely pounded, add the palm sugar and pound until fine.
Break the long beans into about one-inch pieces and add them to the mortar to pound. Add the dried shrimp and a little of the peanuts and pound them too.
Add the fish sauce, tamarind juice, and lime juice as well. After squeezing the lime, don't throw away the two halves of the lime peel — add them into the mortar too. Then, mix everything in the mortar together well with a spoon.
Once everything is well mixed, add the papaya and cherry tomatoes. Then stir and pound gently with the spoon. This way, everything will blend together and the flavor will spread evenly throughout.
