Hello everyone! Among the many fried noodle recipes out there, I want to share one of the tastiest and easiest Singapore-style fried noodle recipes.
Ingredients
- 150 grams noodles
- 10 prawns
- 2 slices fish fillet
- 400 grams eel
- 300 grams shrimp shells
- 600 grams pork bones
- 200 grams pork belly
- 4 stalks garlic chives (Chinese chives)
- 2 eggs
- 4 shallots
- 3 cloves garlic
- 1 spoon chili powder
- 30 grams brown sugar
- 3 spoons oyster sauce
- 2 spoons fish sauce powder
- 50 grams bean sprouts
- A pinch of salt
- 1 spoon light soy sauce (clear fish sauce)
- Cooking oil
Step-by-step instructions
(1) First, fill a pot halfway with water and boil the pork bones for about 15 minutes. Once the time is up, remove all the pork bones and set the bone broth aside separately. Next, heat another wok over high heat. Once the wok is hot, add about 2 spoons of cooking oil. Then add the shallots, garlic, and shrimp shells together and stir-fry for about 3 minutes.
(2) Once the shrimp shells turn reddish, add the fish sauce powder, chili powder, sugar, the bone broth prepared earlier, the pork bones, and the pork belly, then simmer. After boiling for about 5 minutes, once the broth comes to a boil, remove the pork bones and pork belly and place them in a bowl. Then remove the shrimp shells as well.
(3) Next, add about 2 spoons of oyster sauce into the broth pot. Then add the prawns and eel into the broth and boil for about 3 minutes. Once the prawns and eel are cooked, you can remove them. By boiling the pork, prawns, and eel in the broth made from pork bones and shrimp shells, you'll get a natural sweetness that makes the dish even more flavorful.
(4) As the final step, heat about 2 spoons of oil in a wok. Once the oil is hot, crack in 2 eggs and stir. Then add the garlic and mix together with the eggs. After that, add the noodles, a little fish sauce, and a bit of the broth prepared earlier, then stir-fry for about 1 minute.
(5) Next, add the pork, fish fillet, prawns, and eel together with the bean sprouts and garlic chives, and stir-fry for another 3 minutes. Once the aroma rises and the noodles have softened, add a little chili powder and remove from the heat. Then transfer to a plate of your choice, and enjoy this delicious Singapore-style seafood fried noodles!
