Hello everyone! Biryani is definitely one of the most popular foods around. Usually, biryani is served together with meat dishes like chicken, chicken liver curry, or mutton, which makes it inconvenient for those who don't eat meat. So, for those who love biryani but don't want to eat it with meat dishes, I'd like to share a delicious vegetarian biryani recipe.
Ingredients
- Biryani rice - 1 cup
- Green peas - 100 grams
- Cauliflower - 80 grams
- Carrot - 1 piece
- Shallots - 3
- Fresh green chilies - 3
- Garlic - 4 cloves
- Long beans - 5
- Potatoes - 2
- Ginger - 1 piece
- A pinch of salt
- Raisins - 2 spoons
- Cashew nuts - 2 spoons
- Turmeric powder - 1 spoon
- Green chili powder - 2 table spoons
- Butter - 2 table spoons
- Tomato - 1
- Coriander - 1 bunch
- Mint leaves - 3 sprigs
- Masala - 1 spoon
- Cloves - 5
- Bay leaves - 3
- Fennel - 1 spoon
- Cinnamon stick - 1
- Cumin seeds - 1 spoon
- Star anise - 3
- Coconut milk - 100 ml
- Yogurt - 3 spoons
- Water
Step-by-step instructions
(1) First, soak the rice in water for about 10 minutes. While the rice is soaking, wash and clean the vegetables thoroughly. Once the rice has soaked for about 10 minutes, drain it well using a strainer.
(2) Next, put 1 spoon of butter into a pot and heat it over medium heat. Once the butter has melted, add the bay leaves, fennel, star anise, cinnamon stick, cumin seeds, cloves, and thinly sliced shallots, and stir-fry them in the oil. After sautéing for about 1 minute, add the fresh green chilies, ginger, and garlic, and stir.
(3) Once the onions become crispy and fragrant, add the carrots (cut into about 1 cm pieces), long beans, potatoes, tomato, cauliflower, and green peas, and stir evenly. Then, add the ground coriander paste (ground using a grinder) and let it sit for about 3 minutes. Continue by adding the yogurt, turmeric powder, green chili powder, masala, and a pinch of salt, and stir well.
(4) After that, add the coconut milk and stir well. Once the vegetables are cooked and fragrant, spread the soaked rice evenly on top. Then, pour about 2 cups of water along the sides of the pot. Continue by adding 1 spoon of butter, a little masala, coriander, raisins, and cashew nuts, then cover with a lid and let it cook over low heat for about 25 minutes.
(5) Once the time is up, open the lid of the pot. If the water has evaporated and the rice is cooked, gently mix it together with the curry mixture at the bottom until evenly combined. And there you have it - a vegetarian mixed vegetable biryani full of color, aroma, and flavor! It pairs wonderfully with pickled onions or lentil soup.
